Very old vineyards on very poor soils This antiquity of the vines and their location allows to maintain the tension and freshness of the wines, preserving the natural acidity and obtaining wines with a great storage capacity.The result is the maximum expression of the terroir and with an excellent balance between factors such as minerality, fruitiness and acidity.
Manual harvest in containers that are cooled and stored at 5ºC for 12 hours. Passing through the selection table prior to winemaking. Pre-fermentation maceration prior to alcoholic fermentation. Malolactic fermentation with manual bâttonnage in 225 l barrels. and in concrete egg. (see elaboration of reds on our blog)
To the eye it appears clean and bright; with a cherry red color and garnet tones in the edging. Medium-high layer.
On the nose it is intense and complex. Memories of ripe red and black fruit, licorice appear, along with notes of its oak aging, spicy and balsamic.
